Got Strawberries? Make Soup!

Strawberries are not only versatile, but also lots of fun.  They look great in a bowl with some powdered sugar.  Taste great in cakes and other deserts, but have you considered them for soup.

Most of us don't consider soup to be summer fare.  But when it's a cold soup that is refreshing and tastes great, then soup for the summer it is.

Strawberries vary in price, right now they are still very reasonable.  Not only that but just one box is soup for 4 people.  If you planned ahead back in the spring and froze strawberries, then you already have a great beginning for this fast and easy appetizer.

The recipe includes:

1 container of fresh strawberries, one bag of frozen strawberries, or approximately 16-20 berries.

Several squirts of Lime Juice, or 1 lime squeezed

A little sugar to taste.

A small container of vanilla yogurt (optional)

Wash and cap the strawberries.  Put them in the blender with the lime juice, some ice and a sprinkle of sugar.  Blend until the strawberries are completely blended and smooth.  Taste, add sugar or lime juice as necessary to get the taste correct.

 

Pour into glasses, small bowls, or a large bowl if you want folks to serve themselves.

To make the decoration on top:  Thin the yogurt with just a drop or two of water or milk.  Drizzle the mixture artiscally arount the soup.  Here we drizzled in a circle.  Then take a toothpick and do zig-zags through the yogurt. Beautiful..........let's have some soup.
